Lemon Poached Chicken on Garlic Quinoa

  • 1 lb Lemon Poached Chicken
  • 2 tsp Avocado Oil
  • 1 cup of Carrots (julienne cut)
  • ½ cup of Radish (julienne cut)
  • ½ cup of Onions (julienne cut)
  • ½ cup of Celery (julienne cut)
  • 8 ea Cloves Garlic cracked
  • 1 Lime zested, and juiced
  • 2 tsp Coconut Amino
  • 4 tsp minced Cilantro
  • 1 tsp Chili Powder
  • 3 cups Quinoa, cooked
  • Preparation time: 45 minutes

    Size: 4 Servings


    1. In a hot sauté pan add oil, and vegetables.
    2. Sauté until onions start to become translucent and Garlic is aromatic.
    3. Add zest, juice, amino, cilantro and spices.
    4. Toss and reduce to coat vegetables.
    5. Plate ¾ cup quinoa per plate and divide vegetables evenly, finish with 4oz of chicken.
    6. Enjoy!
