Ingredients:

  • 2 tablespoons olive oil
  • 2 cups yellow onion diced
  • ½ cup carrot diced
  • ½ cup celery diced
  • 3 each garlic cloves sliced thin
  • 2 each bay leaf
  • ½ cup zucchini diced
  • 1 cup tomato diced
  • 1 cup kale diced
  • 6 cups stock
  • 1 cup barley cooked
  • 1 Tbs parsley fresh
  • ¼ tsp oregano dried
  • Preparation time: 1 hour 30 minutes

    Size: 6 Servings

    Instructions:


    1. In a medium stock pot add oil, onion, carrots, celery, garlic, and bay leaf.
    2. Sauté until translucent.
    3. Add zucchini, tomato, and kale.
    4. Cook 3 mins, add stock and oregano.
    5. Let it simmer for 30 minutes add barley, fresh parsley and cook for 15 more minutes.
    6. Serve and enjoy!
