Chicken Tortilla Soup

Ingredients:

  • ¼ cup Avocado oil
  • 2 cups Onion diced
  • 10 Cloves Garlic minced 
  • 2 ea Jalapeños minced
  • 4 cups diced Tomatoes
  • 1 Tbs crushed Red Pepper
  • 2 Tbs Chili Powder
  • 1 Tbs Cumin
  • 1 Tbs Paprika
  • 8 cups Chicken stock
  • 2.5 lbs Chicken raw
  • 8 corn Tortillas
  • 8 Tbs Cilantro minced
  • 2 Avocados, quartered and diced
  • 8 Tsp vegan non dairy "Cheese"
  • Preparation time: 1 hour 30 minutes

    Size: 8 Servings

    Instructions:


    1. In a large stock pot on medium high heat, add Oil, Onion, Garlic, and Jalapeños.
    2. Sauté until aromatic, add Tomatoes, Spices, and Stock.
    3. Bring to a simmer.
    4. Add Chicken.
    5. Simmer until Chicken is breaking apart with a fork, about an hour.
    6. Slice Tortillas into slivers.
    7. Add and cook for 15 more minutes.
    8. Serve and top with Cilantro and Avocado.
    9. Enjoy!
