Lentil Stuffed Peppers

Ingredients:

  • 500g Lentils
  • 3 Garlic cloves
  • 30g Dried tomatoes
  • 4 Green peppers (large)
  • 1l Tomato puree
  • 1-2 Dried chili
  • 2 tbsp. Flat-leaved parsley
  • Salt
  • Preparation time: 50 minutes

    Size: 4 servings

    Instructions:


    1. Rinse lentils in cold water and leave to dry.
    2. Peel the garlic and add to the lentils.
    3. Wash the tomatoes, let them dry, cut into thin slices, and mix with the lentils.
    4. Wash the peppers, remove their stem and seeds. Wash again.
    5. Fill in the peppers with the lentil mixture and place them side by side upright in the pot (make sure they will not fall while cooking).
    6. Pour in the pureed tomatoes, but make sure that the peppers are not completely covered with the tomatoes.
    7. Add the chili, sprinkle a bit of salt and bring to a boil.
    8. Lower the heat and simmer for about 30 minutes, with the pot covered.
    9. Serve the peppers with tomato puree and parsley.
