Lentils Over Brown Rice and Quinoa

  • Rice is free from cholesterol and helps to control hypertension.
  • Compared to other grains, quinoa containts almost twice as much fiber.
  • Lentils are full of nutrients like protein, vitamins and minerals and are very low in fat. They have very few calories but leave you feeling full!

Ingredients:

  • Lentils:
  • 2tsp coconut oil 
  • 2 cups cooked lentils
  • 1/2ea yellow onion minced
  • 2Tbs garlic, minced
  • 2Tbs Madras Curry Powder
  • 1ea bay leaf
  • 1 cup tomato small dice
  • 1/2 cup coconut cream
  • Brown Rice & Quinoa:
  • 1cup Brown Rice Cooked
  • 1 cup quinoa
  • 2tsp garlic, minced
  • 1/4 cup onion, small diced
  • 2tsp coconut oil
  • Cilantro as needed for garnish
  • Preparation time: 45 minutes

    Size: 2 Servings

    Instructions:


    Lentil prep:

    1. In a small sauce pot of medium heat add your coconut oil.
    2. Next add your onions and garlic.
    3. Sauté until translucent.
    4. Next add your spices and stir for a minute.
    5. Add your lentils, tomato, and lentils.
    6. Cover and simmer for 30 minutes.

    Rice and quinoa prep:

    1. In a sauté pan over medium high heat add coconut oil.
    2. When hot, add garlic and onions.
    3. Sauté on high until it turns brown.
    4. Add your rice and quinoa and continue to sauté and stir until heated throughout.
    5. Pour the lentils on top of the quinoa and garnish with fresh Cilantro! Now it’s ready to serve. Enjoy!
