Ingredients:

  • 2 Amsety Dark Chocolate Bars
  • 1 Small eggplant
  • 2 Red pepper
  • 1 Small zucchini
  • 4 Tomatoes (medium)
  • 1 Garlic clove
  • 1 tbsp. Olive oil
  • 1 bunch Fresh herbs OR Herbes de Provence (basil, marjoram, oregano, rosemary, sage, thyme)
  • Grated rind of half a lemon
  • Salt and pepper
  • Preparation time: 30 minutes

    Size: 4 servings

    Instructions:


    1. Peel the onions and garlic, cutting them into fine slices.
    2. Dice the red pepper along with the zucchini and eggplant.
    3. Slice the tomatoes, remove the seeds, and cut them into small pieces.
    4. Heat the olive oil in the frying pan over medium heat and stir all the vegetables except for the tomatoes until they turn slightly brown.
    5. Add in tomatoes and grated lemon rind and add in the herbs after 5 minutes.
    6. Leave for about 10 minutes, stirring occasionally.
    7. Add salt and pepper to taste.
