Spicy Tomato Basil Soup

  • ¼ cup Avo oil
  • 1 cup yellow onion, diced
  • ¼ cup celery, small diced
  • ¼ cup carrots, small diced
  • 10 ea garlic cloves, minced
  • 1 Tbs crushed red pepper
  • 2 ea bay leaf
  • 8 cups tomato, diced
  • 4 cups vegetable broth
  • 2 Tbs fresh basil
  • 2 tsp black pepper cracked
  • Preparation time: 1 hour

    Size: 6 Servings


    1. In a medium stock pot on medium heat add oil, onion, celery, carrots, garlic, red pepper, and bay leaves.
    2. Sauté until onions are translucent.
    3. Add tomatoes, broth, and pepper.
    4. Bring to a simmer and reduce by half.
    5. Add basil.
    6. Puree in a blender until smooth.
    7. Top with additional basil if desired.
    8. Enjoy.
