  • 125ml Apple juice
  • 40g Rice
  • 10g Olive oil
  • 1/2 Grated garlic clove
  • 80g Red onion, chopped
  • 120g Eggplant
  • 80g Green pepper, diced
  • 20g Peas
  • 40g Broccoli florets
  • 50ml Vegetables stock
  • 1/2 tbsp. Tomato puree
  • Crushed red chili
  • Salt and pepper
  • Preparation time: 40 minutes

    Size: 2 servings


    1. Wash and cook the rice thoroughly in lightly salted water in a pot, then strain.
    2. Heat up the olive oil in the frying pan, fry briefly the garlic and onion.
    3. Steam the eggplant, pepper, peas, garlic, and onion in the frying pan for about 3 minutes.
    4. Add the vegetable stock, tomato puree, and chili. Season with salt and pepper and cook for another 15-20 minutes at a low heat until it is ready.
    5. Mix the rice with vegetables and leave it for 3 minutes.
    6. Serve Jambalaya in a preheated bowl.
