Banana Oatmeal Muffins with Cinnamon Maple

  • 1½ cups already cooked gluten free oatmeal
  • 1 egg
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ¼ cup coconut oil, melted
  • 1 banana, mashed
  • 2 teaspoon vanilla extract
  • 1½ teaspoon cinnamon
  • 2 tablespoons pure grade A maple syrup
  • 3 tablespoons of coconut flour
  • Preparation time: 35 minutes

    Size: 4 servings


    1. Preheat oven to 350F
    2. Mash banana in a bowl and add cooked oatmeal
    3. Add remaining ingredients and mix well
    4. Pour into greased or lined muffin tins and bake for 20-25 minutes, until golden brown on top
    5. Serve with fresh fruit
