Butternut Squash Soup

Ingredients:

  • 7 garlic cloves crushed
  • 1/4 of each onion, yellow, diced
  • 2 tablespoons of ginger, fresh, small diced
  • 1 leak, whites, sliced 1/4" thick
  • 1 quart Coconut Milk
  • 1 cup Butternut Squash, Diced
  • 2 tablespoons of Sea Salt
  • 1/8 teaspoon white pepper, ground
  • 2 cups vegetable stock (or water)
  • 1 cup black rice
  • 1 tablespoon oil
  • 3 tablespoons of white mushrooms, small diced
  • 3 teaspoons of red bell pepper, small diced
  • 3 teaspoons of green bell pepper, small diced
  • Cilantro
  • 1 teaspoons of chili powder
  • 1/8 teaspoons of crushed red chili
  • 2 tablespoons of Avocado Oil
  • Lime zest
  • Preparation time: 30 minutes

    Size: 3 servings

    Instructions:


    1. Place a small sauce pot on medium heat and when hot add garlic, onion, ginger, and leeks.
    2. Stir until becomes it aromatic.
    3. Add coconut milk and butternut squash. Cover and let simmer for 25 minutes.
    4. In another small sauce pot on medium heat, add 1 Tablespoon of Avocado oil, and rice.
    5. Stir for 2 minutes.
    6. Add the vegetable stock, cover, and let simmer for 35 minutes.
    7. In a small blender puree chili oil, red pepper for 2 minutes.
    8. Strain through a coffee filter. Reserve for garnish.
    9. When butternut squash is tender, add soup to a blender and puree. Be sure to be careful not to over fill the blender as the heat from soup can cause the top to pop.
    10. Once the soup is pureed smooth, serve.
    11. Place 2 fluid ounces of rice in the center of the bowl of soup and Garnish with bell peppers and mushrooms.
    12. Drizzle with chili oil and top with lime zest and cilantro.
