Lemon Poached Chicken

Ingredients:

  • 3 pounds chicken breast
  • 4 quarts chicken stock
  • 4 garlic cloves, cracked but whole
  • ½ onion yellow, large diced
  • 1 lemon, cut in half
  • 4 thyme sprigs
  • 1 teaspoon black peppercorns
  • Preparation time: 45 minutes

    Size: 3 servings

    Instructions:


    1. Add all the ingredients to a small stock pot and bring to a simmer.
    2. Cook for 25 to 30 minutes.
    3. Remove chicken from stock and let rest.
    4. If you're not serving immediately, store properly and refrigerate for future use.
    5. Reserve your stock by straining it, cooling it, refrigerate it and storing up to a week for future use.
