Roasted Sweet Potatoes and Brussel Sprouts

  • Sweet potatoes are very high in antioxidant vitamins A, C, and E, the consumption of which has been linked to disease prevention and longevity.
  • Brussel sprouts are part of the famous cruciferous vegetable family, known for its benefits in preventing cancer. Brussel sprouts are also low in calories, antioxidants, and contain many valuable vitamins.
  • Avocado oil is high in vitamin E and reduces inflammation in your body.


  • 1lb brussel sprouts
  • 1lb large sweet potatoes, diced
  • 2 cloves garlic, minced
  • ⅓ cup avocado oil
  • 1 tsp cumin
  • 1 tbsp apple cider vinegar
  • 2 tsp fresh thyme, minced
  • 1 tsp fresh sage, minced
  • Preparation time: 1 hour

    Size: 6-8 servings


    1. Preheat oven to 400°F.
    2. Trim your brussel sprouts by cutting off the brown ends. Pull off any yellow leaves. Cut into halves and place in a large bowl.
    3. Mince 2 cloves of garlic and add it to the bowl.
    4. Pour avocado oil over the vegetables.
    5. Add cumin, salt, and pepper to taste. Stir to coat.
    6. Line a large baking sheet with foil.
    7. Drizzle avocado oil on the sheet, and using your hand, rub it across the pan so it is covered
    8. Place the veggies onto the pan.
    9. Roast for 40 to 45 minutes. The veggies are done when they have started to brown and a fork can slide into them easily.
    10. Places the veggies in a serving bowl and toss with 1 to 2 tablespoons of apple cider vinegar and the remaining herbs.
    11. Eat them up and feel your body radiate with health!
